MES 30 and Mav 732 temp variance??

Currently smoking sausage in my MES 30 with Mav 732s.  First time to use both.  Temp variance is huge.  MES says 120 and Mav says 180.  I'm just trying to dry right now.  Is this variance normal.  Tested the probes last night and they seemed good.  214 at boiling and room temp was very close.  What gives?!

WOW that is a huge difference.  Where was the 732 probe in the unit?

Its clipped into the side rack slide...second from the bottom.  I opened the door a little and got the temps with 15 degrees...

It may have something to do with it being in the sun and at such low temps.  Now they are in the 5-10 degree variance with the door open and no heating element on.  This may be harder than I thought...

Cstallings , good day. Your 732's (having been Calibrated before the cook) would be trusted, IMHO.

 

Can the other therm. be removed and checked / calibrated icon_question.gif  Most likely lt's not , but i could be wrong cool.gif .

 

My Pit therms. are removeable , but not adjustable , so I se what the difference is and make a note of it in my " Smoking Record Book "icon14.gif  and I can track the heat from them as well as my 732's . That way I'm comfortably content with the 'real time  temps.'  of the cook .

where is the probe in the MES 30? Is it sticking out of the back wall?

Almost sounds like the probe was in a hot spot in relation to the MES probe. IE right above the element and therefore responding to the temp rise much more rapidly than the MES sensors. ...With hanging meat and no racks it is difficult to get the probe in an "average/center" position. As with any smoker, they all have their own personalities with hot/cooler areas that you learn to work with. It's all part of the fun.

That being said, the MES has had some temp problems but from what I have seen, the difference is usually the other way and if it is truly a problem their customer service is great.

I got the temps to stabilize pretty close, but I have the door open a few inches.  Sitting at 120 right now for the dry.  Maybe I had a fluke in the startup, but seems to be doing ok now.  We will see what happens when I close the door and crank up the heat.

The right side wall gets very hot, so does right side back wall at least half way up, in. my 800 watt mes40. The newer mes30 is 800w with smaller cabinet than a 40 will also be hot if not hotter. Use a clip or potato to place the Mav probe near the mes temp sensor. Write down temps for both every 15 min for two hours, do this with no meat. This flexible frame will cover when mes cabinet is cold through complete warm up. You should have an accurate idea of what the temp differences are.

The MES is off pretty bad, but I guess that is ok.  I have the MES set at 145.  When the heating element kicks on the Mav shows 160 and it eventualy the mav moves to 175, 176ish.  The Mav drops down to 160 and then the heating element kicks in again and it works back up to the mid 170s.  At these temps there is a 15 -20 degree difference between the MES and MAV...

For the first 90 min or so my mes 30 and mav 732 will disagree sometimes by 30-40 deg.  Sometimes the mes is higher and sometimes the mav is higher.  A large hunk of cold meat near the probe can cause this.  If the mes is in direct sunlight the temps seem to vary as well.  After 90 min or so they are usually within 8-10 deg of each other.
