I have a few questions on smoking a hog , first one is should I rub it or not , if so what would Yall recommend? Second one is about how long am I looking at, its a150 lbs live weight skin on head on , also would it be better to sew it back up with butcher string or not . Thanks for the help this will b the first whole hog I've done .
 
Marty, evening and welcome to the forum....  Rubs always add flavor....  butterflied will cook faster.... meat side down first, then flip to skin side down....  Keep the temps low so you do not render out the fat..... pig fat burns really good.... REALLY GOOD.... I know... been there, done that....   Dave
