For lunch Tuesday at work, myself and Porker Ace, better known locally as  "LAW and ORDER" will be smoking 30 brisket flats to sell for a benefit to the American Cancer Society in response to Breast Cancer Awareness Month.  Plates will include smoked brisket, baked beans, and cole slaw for 7 dollars. This is our second time producing brisket for the masses! 10 Lbs sold out in  1 hour last time!

Now that I have a new camera, I plan to have pics of this smoke to share. Nothing like a full smoker  to get the juices flowing!

See you in a day or two...

Glad to say the cole slaw has been replaced with mac and cheese!  We ended up with 32 brisket flats. Last nite I got them trimmed and rubbed with Jeff's rub. I have a few pics of that. Porker Ace has got the smoking started and I will finish tonite. Then we will pan, foil, and heat to finish in the morning for lunch. We expect to serve about 300 people. The flier says  "while supplies last" ! I will post pics soon.
