Finally tried a turkey on the smoker (SP SC200 electric).  Going through many posts, I thought I would brine it and cook it like a regular oven temp with hickory chips.  While the turkey was not dry, it was moist and tender but feel it could have been juicier.

Here are the steps for my 10 lb turkey.

Soaked in brine for 10 hours.  I had a brine mix from superstore on sale for 1.99.  I added half cranberry juice to the water mixer.  Brine also had herbs (rosemary, thyme etc).  Rinse the turkey well and stuffed fresh herbs under the skin and oil and seasoned outside.

Using hickory chips, I set the temperature at 325 deg and the probe to 158 deg.  I did the upside down turkey trick (juices run from the thighs through the breast meat).  I also put a pan with apple juice for some extra moisture.

I checked 2 hrs later and to turn the turkey right side up again and found the temperature near 158 deg.  Agh! it cooked too quick.  I let it go to 160, took it out of the smoker and wrapped in foil and towels to keep it warm at put in the cooler.

Anyway, in conclusion my first smoked turkey was somewhat a success.  Next time I do plan to cook on a lower temperature for longer.

Anyone else who has experience on a similar smoker, please give me some tips.
