Somehow I stumbled on this very interesting Forum. Am new to this, just eager to learn new skills, tastes etc. The Icelandic meat-smoking tradition is mostly about lamb - smokewd lamb meat is in many families THE Xmas dinner. I have just built my first smoking facilities, where I smoke mainly salmon and trout, will try some geese / lamb recipes soon.

Glad to hav found you, greetings from Iceland ("Top of the world")
