Well I made the lemon cake and chile below for the Husker game this weekend and that was an epic let down because they lost in spectacular fashion. But the food was a big win on the other hand. The lemon cake came out very moist and fluffy. It was a super easy recipe my wife got off Pinterest. It was the perfect follow up to the bitter taste of the football game.
- 1 box of Angle Food Cake
- 1 Can of Lemon Creme
- Powdered Sugar
- Mix the lemon creme and the angle food cake mix together until the mixture is moist.
- Pour the mixture into a lightly greased 9x11" pan.
- Bake at 350 fro 20 minutes or until the top is just turning golden brown.
- Sprinkle with powdered sugar right after you get it out.
The pulled pork chile was a great idea and a great use of all of the pulled pork I have in the freezer down stairs. My wife said it is the best chile I have ever made. First off the smell coming from the pot was amazing. You could really smell that pork. Then once we finally sat down to eat at about half time the smokey pork flavors really came through. I highly recommend doing this. It could have used a little more spice for me but my wife is not a big spice person so I scale the spice way back for her. I also have some chopped brisket frozen in the freezer I am going to try this with later this fall and winter.
Pulled Pork Chile
- 2 46oz Cans Of Tomato Juice
- 3 Cans of Diced Tomatos
- 3 Cans of Kidney Beans(Dark or Light - I used both)
- 1 Medium Yellow Onion
- 1-4 Jalapenos (Use to suit your taste)
- Homemade Pulled Pork - Maybe a pound or two
- Chile Powder
- Saute the onion and jalapenos in a small pan with butter or olive oil until the onion is translucent
- Place the pulled pork in your soup pot.
- Pour in the tomato Juice and undrained diced tomatos.
- Pour in the kidney beans after draining them.
- Dump in the sautéed onion jalapenos mixture.
- Add the spices to taste.
- Bring the pot to a rolling boil.
- reduce heat to a light simmer and let simmer for 6 to 8 hours.
