I was at Sam's Club this morning with The Bride, and this saw this, which is just wrong.


Okay, getting back on track...The Bride wanted ham sammiches this week, so we picked up this at the grocery store.


On top of the plastic shrink wrap, there was this odd paper-like membrane.  That had to go.


I was going to be too busy today to deal with a glaze, so I went with a basic rub of salt, pepper, onion, and garlic.  I went easy on the salt as there was probably already enough in the ham.


I scored it a little to help with smoke penetration.


I rubbed it up and it was ready to go!


All done!


I let it cool a little, and then sliced it up packaging.


The specifics:

Smoker: MES40 with AMNPS

Wood: Pitmaster's Choice (may take advantage of the current free shipping deal to stock up)

Temp: 225

IT: 165

Time: Approximately 6 hours

Nice and simple!
