first time cheese

received my order of BBQ delight pellets in the mail today and  going to try them  out for the first time on some cheese  ..... this is my first time smoking cheese  was wondering how long i should let it go for in the smoker (MES 30 & amnps)  using
"Orange wood pellets"  cheese is 1 8oz block Colby and  1 8oz block extra sharp Cheddar
 
I would smoke it about 3 hours and then look at it and see how much smoke it has taken, if you like it real smokey let it go longer.
 
Be sure your ambient temps are low enough to smoke cheese without ice.

I am about a month away.  Even then I might have to do it at night.  If it gets above 75 or 80, there could be a lot of sweating.

Good advice here - I smoke mine for 2 1/2 hours most of the time and it give me good smoke flavor but not too much. Try some at different times and mark them, so you see what you like  
 
I should add that the 75 or 80 degrees I mentioned were pit temps for the cheese.  Not the outdoor ambient temps!

Mt first time I started with several chunks and at two hours, started pulling out a chunk every half hour or so, aged the two weeks, all to see what my wife told me I like best.
