My name is Alan. I live in St Catharines, Ontario which is part of the Niagara wine region. I have been a chef since I was 16 so I have some thirty years in the industry. I am presently teaching at the Niagara Culinary Institute. Bought my first Weber charcoal grill years ago and have loved smoking and grilling ever since. I recently purchased a Saffire Kamado that I am learning to use, but enjoying immensely. Being a huge fan of ethnic foods, I am trying Tandoor, Bo Saam, Pernil and such. 

Looking forward to sharing recipes and getting advice.
