Burnt Ends Salad w/ Q-View

So the Wife and I eat a lot of salad for dinners. We keep it very simple with a little greens of some sort, toppings like cheese, sunflower seeds and cucumber. Sometimes we will put other things, but that is it for the most part. Tonight I decided to clean out the fridge and use what I had on hand for dinner.

What was found was this:

Small piece of brisket (point end)

Individual cup of apple sauce

Small piece of Euro Cucumber

Raw Bacon Pieces (from my failed Fatties attempt)

A stupid to save amount of vidalia onion dressing

few other standards I keep on hand.....

I decided to make burnt ends (never done this before), apple sauce vinaigrette on a bed of greens.

Rendered the bacon pieces down for the fat. Meanwhile I was dicing the point end in about 1/2" dice. Preheated the oven to 325. When the bacon was rendered down, I pulled the bacon bits out and removed most of the grease and saved for later use. I then tossed the brisket pieces with the bacon fat and some of the seasoning used for the smoke. Placed in oven for about 30 min till tender yet crispy. Drained the fat off and tossed a bit of store bought Sweet BBQ sauce on it and back into the oven for 10min.



While the burnt ends were cooking I decided to make a dressing. In a container I put apple sauce, apple cider vinegar, vidalia onion dressing. I then used the immersion blender to emulsify the dressing as I slowly added corn oil to make the new dressing. I wanted it to be on the sweet side to counter balance the saltiness of the burnt ends. It was needing a bit of body, so I put just a touch of BBQ Sauce into the dressing.

Dressing

Warm Burnt Ends
