Does anyone here have know what the minimum capacity of a LEM or TSM 20 lb sausage mixer is?  I usually make ~5 lbs at a time and that is just a bit too much for my KitchenAid.  I plan on doing larger batches in the future once know more of what I want but right now I'm just working my way through all the recipes in the Charcuterie book.
 
I don't have the LEM. I have the Northern Tool and it looks to be the same.

I usually max out at 17 pounds and the minimum is 5 pounds.

4 and below go in the KA with a dough hook.
 
 
Ditto with Martin

One them fancy SS meat mixers work good if you have them full of meat, 5 lbs in one and it just balls in the middle...POJ

Meat lug with hands or if you have a KA mixer, use the dough hook, 5 lbs works great in there.
 
I use a Stainless Steel Bowl for small batches. I use Kirby's mixer for larger batches, like Kevin has shown above.
 
I have a Kirby mixer. Killed my cordless so i bought a corded 1/2" chuck for the times i need to use it.
