I'm Wes.  I've been smoking now for about 3 years.  I'm still learning and this is the place to be.  I've been reading the forum now for about a year. 

I smoke in a simple Char-griller with side box.  

I am currently working on a brick smoker.  Its almost complete.  I can't wait to see smoke out the top.

I'm been married to the same wonderful lady for 28 years.  We have 3 boys, two are in the United States Marine Corp. 

If it has a pig in the title, I'll smoke  or grill it.   Cows cost to much and don't taste near as good.   Been experimenting with seafood on the grill.  So far, so good. 

I'm not good at computers, so if I don't reply very quick, well,  I probably can't find where I posted.... :-)

When you say Northwestern NC mountains, I think first of Boone. Are you in that area? If so, I have a brother in Johnson City TN a little to your West. Our family hails from Raleigh, but our paternal grandparents lived in Nantahala Township in the Southwestern NC mountains.

Congratulations on the 28 years. We're working on 52.

As I said in your smoker post, :welcome1: to SMF!

I'm no expert with the PC but I've been working with computers since the mid '60s. If you have questions, just PM (private message) me and I'll see if I can help, or post and everyone here will help.

In case you haven't found it yet, if you scroll to the top of the page - just under the CHAT sign - there is a blue envelope and some text to the right of it. If you have no PMs in your inbox, it will say No New Messages, otherwise it will tell you how many are in your inbox.

To PM just place your cursor over the name of the person posting (in this case "rabbithutch") and an options menu will pop up. Choose the Send PM line and click it and you will get a screen to enter your PM.

Hello Wes, welcome to the forum!  Tell your sons thank you for your service!  I spent 37 years in the military, and have been married 43 years.  Glad to have you here.  However you should try smoe cow to very your diet.  Man does not live by pig alone!  It is very tasty though.  I have smoked both and they are tasty.  Of course I an a Yankee, and feel the need for cow once in a while.  All the questions I have asked here have been answered with speed and knowledge from other members.  Ask away, and keep on keeping on.  Steve
