After reading about cupcake chicken, I want to make some for my son's birthday party. Need advice on what temp and how long they should cook for? Do i need to brine? Any advice from those that have done this would be appreciated.
Funk, IMHO , I would cook at 275° to 300° until the Internal Meat Temp is 170°. Yes, Brine to insure moistness. You may use Butter or Oil on top to crisp the skin, and sauce them the last 10min., so they don't burn the sugar in the sauce...
