Well it was just me today, my Dad and Sis went to Ohio for my nephews wedding and my Son is in Puerto Rico on a mission trip with his youth group so I decided to just smoke all day!

I smoked a fatty for breakfast! 

Pretty simple one, Tennessee Pride "Hot" Sausage, scrambled eggs, hash browns and smoked cheddar cheese. I've done a few fatties before but never did a bacon weave. I think it came out pretty good:

Chicken wings for lunch, my usual injection but I changed it up on the sauce. I found some Texas Pete Fiery Sweet Wing Sauce. It was really good, not as hot as I like but the heat and sweet went real good together:

For dinner I did another rib experiment to continue my quest for what I really want in a rib. Ribs have been kicking my butt, I just can't find a flavor profile that I really like but today I got a lot closer. I had two racks of baby backs and on Sunday I put one rack in Pops wet cure brine for "Bacon on a Stick", the other I left plain. Today both racks got rubbed down with Chef JimmyJ's "Original BubbaQ Rub" then onto the smoker. I did one half of each 2-2-1 and the other halves I left un-foiled for the entire smoke. For the foiling stage I mixed up some apple juice, Williamson Bros. Spicy Chipotle BBQ Sauce, some honey and a little cayenne pepper and poured about 1/4 cup on each half rack. The ones un-foiled I basted a little of the foiling juice onto at this point. For the last hour I put the foiled ones back on and they were still pretty wet so I didn't do anything else to them. The un-foiled ones got another baste of the juice. At five hours they all felt really tender with a toothpick so off they came.

So I had four different flavor profiles to explore and explore I did! I learned a lot more about ribs today and I am getting real close to getting what I want. Chef JimmyJ's rub is really good and I think that put me real close. I think a little less honey and I might be there.

I didn't make any sides today, this was just a carnivores delight!

I am so stuffed right now I might not eat for a couple of days......ummmm I don't think so! I can't wait for some more fatty in the morning!

I hope everyone had a Great 4th! I saw a lot of Great looking food being smoked here today!

I will have to try doing the wings like you do . can't wait to try injecting them.
 
Thanks Gary! It was a busy day, between tending the smoker and answering roll call, I think we had over 70 new members today and probably 30 in roll call but I thoroughly enjoyed every minute of it!
 
Looks good to me! Maybe a different sauce...Try this some time. Tangy with good heat but not burn your face hot...JJ

Red Bubba Q Juice

2C Cider Vinegar

1C Ketchup

1C Beer or Water

1/2C Texas Pete or other Hot Sauce

1/2C Brown Sugar

1tsp Gran. Garlic

1tsp Gran, Onion

1tsp Blk Pepper

1tsp Salt

1T Worcestershire Sauce

Cayenne to Taste

Combine all and simmer 15 minutes to combine flavors.

Makes 5 Cups
 
OK JJ I am confused, you told me not to use your finishing sauce for foiling because of the possible vinegar reaction with the foil.

I really don't like vinegar, it's like a lot of wing sauces have a lot of vinegar and I just don't care for them. It's OK if it's not too strong but if it overpowers the other flavors then I don't really like it.

Oh, I usually put Tony C's on my wings but since i found out it is 80% salt I don't want to use it anymore so today I took some of your rub, added a little more cayenne and put that on the wings and it was Great! So I found a replacement for Tony's, heat and flavor without the salt!!!
 
The Red is a N. Carolina BBQ sauce added to Ribs at the end. I didn't realize you didn't like too much vinegar. Never mind...
