Yep, great postings here, but one thing you can say, do your ribs the way you, your Family and friends like, your way, there is nothing wrong with that. We all know, what works in Texas, would not fly in Tennessee. But the 3 – 2 – 1 method, modified to your own needs does work, What you put in the foil at the 2 stage is your choice.
I always pull the silver skin off, marinate my ribs for 24 hours, Apply my rub, then wrap in plastic wrap for 24 hours, then do a loose 3 – 2 – 1 smoke. Often, when doing ribs, I have 2 MasterBuilt Rib Racks, so I usually toss in a pork roast and some potatoes and onions, those to make a Potato Salad.
