Doing my first butt.

Loaded it in the smoker about midnight last night.  The MasterBuilt smoker did wonderfully, maintaining an even temp all night pretty much.....right around 255 mostly.   It is an 8.75 lb. Boston Butt........so I was planing this:

- hopefully out of the smoker about 1:00pm today (when it reached 205 degrees internally)

- wrap in foil - then a towel - and into an igloo cooler

- take out at 3:00 - let it set a bit - pull about 3:30

- serve at 4:00

Now, i just read somewhere here that when it gets to 145 degrees - I should wrap it in foil and keep in the smoker till it reaches the IT of 200 or so. 

So, here is my question:  based on this pic - should I have more bark at this point (7 1/2 hours in - IT of 165)?  Or not necessarily?  If I put it in foil, wouldn't that cut down on bark formation? 

Any advise is appreciated.

Mine usually have a bit more bark than that at your temp...but hey, every smoker is different...

yes, if you put it in foil it will soften and reduce bark formation...

...keep us up to date!
 
You are good to go , it's a pleasure to see a Butt look like that :

You "have" a Bark started , just not real dark. You'll have a great Butt

Yes, wrapping will disrupt the Bark , with the right heat (which you appearently have ) and good TBS ,they will look a beautiful Mahogany color and great smoke taste throughout ; plus a good Smoke Ring...

Cooked to 200° to 205° they will do this for you:

These (4 of them total) took about 18hrs. at 225° (+/- 10°) , they almost fell apart and were juicy , as seen. Notice this Bark , nice and doesn't 'look' overdone .

So, this is how it ended.

Ended up going till 2:30 (14 1/2 hours) and it reached 205 degrees.  The bark was marvelous....sorry, with all of the hub-ub of guests, meat work, etc, did not get a picture.

Wrapped in foil until 3:15ish........then took it out and let it set  opened up until 3:45ish.

It was falling apart.  It was wonderful.
