Butterflied and filled with broccoli, mushrooms, and cheese then tied back up.  Will post finished pics later.  Smoked with hickory at 225 to an IT of 145.  Let rest for 30 minuted tented with foil.  The best pork I have ever eaten.  Tender, juicy, and delicious.

I only did half the loin as there is only two of us eating it. I think the leftovers may have been better tonight.
 
That looks amazing! I have a half loin in the freezer, was going to make Canadian Bacon, but maybe not so much!!!

Did you saute the mushrooms first and did you use fresh broccoli or frozen and did you do anything to it before hand?

I sautéed the mushrooms in some butter and garlic beforehand. I used frozen broccoli but I steamed it and let it cool so it didn't melt the cheese before going in the smoker.
