Well, Trish got me another "Gratis" smoke for a Graduation

, They brought 30# of Butt for the doings , an easy smoke...

Just rubbed and on "Flo"

. I found a nice little grate cover for the Meat (try to keep the black off the bottom...

an hour in and I Alcoholed the Probes and stuck the Pig...

4hrs. in and right on target...

now closed until the defining moment...

see ya later with some more luscious looking Butt...

Outstanding! I'd say you are the Butt King!!!! 

They always come out looking so delicious. I like those grate pans. I found some sheets with holes like that at Lowe's and use them for cheese etc.

Gotta put a mark on this one so I don't lose track of it!

Nice start on those graduation butts, Stan!

Seeing this makes me miss smoking on my SnP 40"....it's got a bigger cooking grate than anything I want to smoke, but tossing a good sized load onto a horizontal sure is fun!

Well , her they are at 8:30pm....Done

 13hrs. to finish...

Now I put them (un-pulled) into the Fridge until Sat. , heat , pull , finish with a vinegar hybrid of my cheap sauce...

Stay tuned for the Pull...

And here they are  (one anyhow ) ,pulled and ready to put in the Buffet Pan for transport.

(I do one at a time to insure to get a good break-up of the muscle,just me...)

Trish , being ,Trish; got up and went to Fremont for the DIL , and when she got back , I hadn't pulled it fast enough and grabbed each one and ran it inside to the pan...

But you did see the Butt from end to end...

Husker , "The Butt King" , maybe earlier in life , oh , I see what you mean...Hehehe

Pops , those pans were from Wally World... worked great ... $2 for a double pack (I think).

IBB, be confident , as long as your smoke is a nice color and you don't let the temp. fall for too long , or get too hot... you're good to go.

My only real secret is to leave it closed and watch the temp. ; no-one will steal it from you , and it cannot walk away , so... why bother it and look at it all that much

.

Besides , it will be juicier and have a better bark... just sayin'

.
