Pops, I read through all of the beef section a few nights ago. Man, the author is dead-on with his interpretation of what the average consumer meat buyer will see, and how they view it. Lots of great tips and little-known secrets of meat cutting, along with realistic recommended cooking methods for the various cuts, all based on tenderness, which makes perfect sense.
