It is quite special. I've had so many requests for this pastrami it's silly..

The tri tip is super lean and super tender. I've only made pastrami with tri tips so I can't compare the two personally. I'm going to do some elk cuts next time, which I know will be amazing.
 
I've done pastrami with sirloin tip and bottom round and the tip was much better.

Your tri tip looks amazing! Wish I could find it around here, as much as I have read about it I really want to try it but have never seen it here. Keep it coming so at least I can drool over the pics!

You got it! The local butcher here loves me. I'm trying an elk roast next. Should be fun!
