Since I have been in class for the last several months, I haven’t had a chance to get into smoking anything like I wanted….timing was always off…..Well this being the first weekend out of class, I couldn’t pass it up…..Here are some pictures of some sausage and my first attempt at Canadian Bacon……I made 22lbs of sausage yesterday, and about 2 weeks ago, I started curing some pork loins for CB….I took them out yesterday and they looked and smelled great !!! I can only image what they are going to taste like once they are smoked…….I rubbed 2 of them down with some extra garlic and onion powder and left the other 2 alone to see how the recipe would work….Anyway, getting to smoke something today is like a weight has been lifted off my shoulders….I never thought I would get this much enjoyment out of smoking something……well enough of my rambling here are some pictures…….

Same here, I'll be keeping an eye out. Glad you got back to the smoker.

What type of sausage did you make? I've made CB only twice and all I have to say is it is Awesome!

This was my first time at CB too….. It smells fantastic

……I just made some pork sausage….came out great though!!!!!! I have never ventured out much past pork or a little deer…. haven't had a chance yet….beef is more expensive and I really haven’t had any beef sausage that I liked enough to try it yet

I purchased a dedicated meat grinder and used it to  ground up some beef chuck roast, short ribs, and a little sirloin that was on sale.

I used 2/3 of it to make burgers and the other 1/3 I mixed with some fresh ground pork. I used two parts pork to one part beef, added some

minced garlic, course sea salt and ground black pepper.

The sausage came out really good. My wife and daughter like the "drier" sausage, (not too much fat) so that recipe fit the bill perfectly.

BTW- the burgers are fantastic.

Joe and TJ, I didn't mean to hide it, I really didn’t think when I posted it…. Thanks for the compliments and I hope to be firing up the smoker up this week….. I was able to pick up some pork chops at Albertson’s about 3 weeks ago, .98 cent a pound…….They are irregular cut, some are thick and some are thin, but I couldn’t pass them up….. I’m curing 1 pack of them with Pop’s wet cure as we speak and I hope to smoke them by Wednesday, if the weather co-operates………    SB
