Greetings...a newbie to the forum but not to smoking meats. I found this forum while researching a new smoker.
I've been smoking meats, grinding meats and making sausages and jerkies for about 15 yrs. It's become more than a hobby for me. I believe fresh ground meats and sausages are healthier as you know whats in them...no preservatives, nitrates, or pink slime.
I made my first fatty today - I have pics but the fatty is still on the smoker - hopefully I can put up pics later. This forum is filled with a wealth of information and knowledge. Glad I stumbled upon it here. I'm looking forward to participating.
Being from ND/MN originally, I like venison and bison - great sausage and jerky; hard to come by in So Cal. Love So Cal because everyday is a good smoking day here - I can depend on the weather to always be good enough to be outside and around the smoker. I do smokes about 3 times a week.
