doing a test..... How much Eca per lb of meat.. its not on the pkg
On my last batch of sticks, I used the following...
Per B&P ECA:
1.5 ÷ 25 = .06oz of ECA per pound
.06oz = 1.70 grams per pound
I made an 8.75lb batch:
8.75 x .06oz = .52 oz (14.87g)
So I added .5 oz of ECA.
On the conservative side & it still added a nice tang.
9 grams per pound would be fine if you're making sour candies.....
I found it from nepas at 1.80 ounce which is 51 grams per 5 lbs... and divided it by 5 which is 10 and went with 9....http://forum.bradleysmoker.com/index.php?topic=14060.0
Its in the meat so i'll let ya know how it comes out... its just a lb of beef so its no biggie... i've lost bigger batches
Yeah that is weird how the different companies list things. When i want a bit more tang than the 5 tsp for 5 lbs of sticks i add an extra 1/2 tsp
I just found it on B&P web site. It says to use 1.5 oz per 25 lbs of meat 42.5 grams/25= 1.7g per lb......... Looks like tang might go to bang....... Will let ya know how it comes out... it smelled delicious when I mixed it up
So can we assume anywhere (somewhere?) between 1.5 to 3 oz for 25 lbs will provide adequate tang?
