Got another round of venison this week.
10 lbs here going to be split into nacho cheese, teriyaki and black forest slim jims.
Still frozen tight so needs to thaw some.
I think the guy let it bleed out to long. Did a beef fat cut in.
The venison in the baggy is mine from PA, Going to make some for me....YIKES
Good for you in making some for yourself! I love your sausage making posts as I am going to start this endeavor with elk meat. Most of my venison is gone . Patiently waiting for the results.

Doing these in 3 lb batches.
1st up is black forest (in bowl) Teriyaki on deck (left)
Next is teriyaki.
BF & Teriyaki andging with hickory smoke going.
While those 2 batches are hanging i'm going to mix up some AC OP Nacho.
Will mix mine up tomorrow. Might go with kielbasa sticks
