Since I joined SMF, folks have been asking me when I would try either smoking a pupusa or making some kind of local food in the smoker. In El Salvador, the local food people eat the most are pupusas, which are corn tortillas stuffed with cheese, refried beans, pork, or any combination of those.
Had some leftover pulled pork, so went ahead and made them. First up, some corn tortilla dough, and some "quesillo" which is a mild, soft local cheese.
Then some pulled pork (nuca, which I think most closely resembles the pork collar) which I had smoked a few days prior.
Then they went on the griddle
A few minutes later they were done. The burnt stuff on them is cheese that oozes out and crackles on the griddle, this is my favorite thing about pupusas.
And a look inside them. With the sweet BBQ sauce, they became an instant favorite. I can't wait to smoke some more pork just to have it readily available in my fridge and make some more of these bad boys.
