Here's the shoulder after two hours.  It's cold out today so I'm having to really pump up the fuel.  It just looked so good already I had to snap a photo

You need another option on your pole.

 

low and slow 225, foil at 165

I agree you need another option, most of the folks on here foil at 165.

 

Personally I don't. We like the bark so we just let it ride the whole way unfoiled.
