Horseradish----homemade and fresh ground---warning about the lingering HR taste in the FP

For those of you that wondered where this wonderful side for prime rib comes from..... these are the leaves of the horseradish root..... the frost has set them and the roots are absorbing all their goodness.....

I dug the roots and have given them many rinses in cold water and scrubbed with a brush to remove the dirt......

Dicing into very small pieces to throw into the food processor to chop very fine.....

All the roots for this batch are ready for the Food Processor.... I will add them a handfull at a time and then transfer the pureed roots to a stainless steel bowl and put the lid on it until all the roots are finely chopped.........

Here is the finished product..... Now you may wonder why there are no pictures of the food processor grinding these roots up... I will tell you... I forgot... I did not have time.... The real truth, when grinding horseradish roots, you can only think of getting done so your eyes will quit watering and you can breath air that is not like pepper spray, or mace or ghost pepper dust....

After all the roots were pureed and placed into the ss covered bowl, I waited 20 minutes for the heat to develope and then added back to the FP... vinegar was added to help form the puree.... the vinegar stops the developement of the enzyme that creates heat... the longer without the vinegar the more heat gets developed... place into the jars and VOILA !!!! The best horseradish you can get... from your garden to your plate.... Thanks for looking.... Dave

I used to grow it, we would grind it outside, no food processor, I never liked the stuff, just growing it. MY mother would put vinegar on it, then one day I had the bright idea to put Franks Red Hot on it, and then it was really good, I am not a big vinegar person. I miss living out in the country where we used to grow all kinds of stuff.

Dave, That looks good, my Dad turned me on to Horseradish on Kielbasa and Ham when I was a little boy. Dad would grind a cooked Beet in as well, cool red/pink color and a little more depth of flavor. Looks like you did not need to peel the roots, is that because they were young?...JJ

Mornin Dave, Nice lookin root. I went to dig mine up a couple weeks ago only to find the whole root was rotten, punky. I'm really not sure why the leaves were still green  Needless to say I was real disappointed.

ever hear of that happening? I'll try to remember to add a pic

Dan, morning... Yeah about the punky rotten roots... seems 2 year old or older get soft and have a rotten woody core.... best to harvest yearling roots, throw the old roots away and replant a yearling for next year... I replant this time of year... I left these in the ground 2 years... the original root was bad but there were many new shoots that I harvested.... I only use the new young shoots so I don't have to peel them... easier that way... milder and more flavor...  Cold water and a scrub brush and I'm ready to grind...

All I can wish for is a green thumb like you folks. I can't seem to grow much in our garden but weeds and cukes. Now I would like to grow all mine own stuff to. I like to try and use fresh everything as much as I can. I did do an exchage with Squirrel last year and she sent me some fresh horse radish that she made and it didn't last long. Yours looks awesome too.

Todd, morning... I have had it take over the garden at my old place... Bride told me I could NOT plant it in the garden here... It is planted in an apple bin that is 4" off the ground...

This method sure keeps it from spreading..... Good horseradish... In jail horseradish... If you are not inclined to corral the root in some sort of container it will spread worse than bamboo... and that's the truth....

Chef JJ, morning... My grandma's uncle added pickled beet juice to grind his HR... his was the worlds hottest HR... I think he brought the root stock from europe with him... removing the lid of the container would bring tears to your eyes and clear a room of family members during the holiday season... Dave

Thanks for the compliments Mark.... I think it was Dutch that sent me this in January.... I'm trying to get stuff going to use these ideas to make gardening simpler... No weeds... No bending over... better, healthier plants...

My green thumb turned yellow 30 yrs ago... lol.... I buy it in the jar, but recently I did buy from Butcher Packer "Horseradish Powder"

It is milder than what I had expected, very fine like flour.  I got it for steak sauces or cocktail sauces that are smooth vs. lumpy, or added to beef sausages, etc and any other use that strikes my interest, lol!   A teaspoon of powder added to a couple tablespoons of mayo and/or sour cream makes a mild to medium horseradish dip or spread!
 
dave, how would i used the dried HR you sent...........almost use up the garlic.....great stuff!

love horseradish on prime rib and on sausage... we would grind in a hand grinder outdoors and add vinegar and some sugar i think. gonna have to dig that up...

trust me a green thumb not needed for horseradish.... just be careful where you plant it cause it will grow like mad. and then take a tiller and till it under to get rid of it... guess what, every little piece you chopped it up into becomes a new plant...

that is the neatest idea i have seen in a while, a horseradiish pen... hmmm wonder if ya had a side that flipped down so instead of digging it out...

my mom had this old saying, you can dig horseradish in any month that has an "R" in it...???

I haven't figured it out yet ?????  Grind in the molcajete or burr grinder.... Add to a sauce you are simmering on the heat for flavor... I'VE GOT IT !!!

asks Pops or Chef Jimmy J or Miami Rick or MBally.... I just had the idea of drying it... I didn't know the HR would come out harder than a chunk of granite... 

I think simmering in a BBQ Sauce or Marinade would add some interesting heat... Obviously something an Iron Chef would know... not me.... I'm here to learn from you guys...

T Nut, morning... Buy a root at the store and cut it into chunks and stick in the soil.... It is the most prolific weed you could imagine.. I would plant it in a container of sorts to facilitate harvest and to keep it from spreading...

erain, morning... I tip the bin over on a tarp using the forks on my tractor.... Harvest the HR and then add fertilizer and replace the soil in the bin.... I love my tractor...
