Hi, my name is Dave. I have been working 12 hours a day 7 days a week since July, but the season's over and I will have my first day off this Saturday!
I discovered the SMF about a month ago while searching the internet and wow this is the best site for smokin BBQ.
I've read several threads, so last week I bought a 250 gal. propane tank. I'm ready to start. It's about 9 feet long and 28 inches in diameter. I was just looking at it and I thought it was big but some of the projects represented on this site are truly enormous. It looks kind of small in my back yard. I believe bigger is better.
I've built several trailered grills for mobile kitchens and always wanted one for myself so in 2009 when the company I work for had me build one for them, all Stainless Steel, I built one for myself after the season. It's very difficult to cook ribs, tri tip, and brisket on. I have only been using mesquite charcoal from Mexico. Now first of all I don't know how to cook, but I am going to try to learn. I found out my grill, which I thought was a BBQ isn't. But it is a good grill for chicken, hamburgers and hot dogs.
I bought a trailer last year with the idea of building a bigger grill! It was going to be 4 feet wide by 16 feet long, but along the way life threw in some road blocks and slowed me down, thank God, I found this site and have evolved to a double reverse flow smoker.
I am a fabricator and have been building things since 1969. Currently I work mainly with stainless. Apparently there are quite a few professional builders contributing information and their R and D experience. This is very exciting. So many great ideas!
I work with some guys who can BBQ. There is a discarded air tank at work that is almost 1900 gals. 20 feet long by 48 inches diameter 3/8th wall thickness. We're thinking about turning that into a giant smoker. Just an idea I thought I would throw out there. It's big it's heavy but it would turn heads. We think it could make a good smoker.
I want to thank everyone at SMF for all the good information and friendship. I plan on smoking a turkey for thanksgiving and with the help of you all I'll have this smoker finished before then. I look forward to all the good times. Thanks!
