The family requested a chicken for lunch.
So on the menu we will have hot wings, drumstick in peri peri sauce, beer can chicken in lemon ,herbs
flat bread ,potatoes and beans .
Put the drumstick in a peri peri sauce with water, vinegar and tomato puree.
And left it over night .
In the morning got lemons, chilli’s and rosemary from the garden and made a wet rub
With salt, garlic, evoo, lemon juice, lemon zest, chilli, soya sauce,
Now making my hot very hot Asian sauce for the wing.
Now is the time to cook
Lighting the fire and when it is hot I move it to the end of the oven
As the temp drops to 400 F I put the peri peri chicken with the cover
And the wings
By the time that the temp drop to 300 F the wings are ready and the piri piri chicken is now pre cooked. I remove the cover
and put in the beer can chicken and the A-MAZE-N with oak
For a 1 ½ hour or 2 turn it every 30 minute and mop it with the rub.now it is ready
Mix the wings with the sauce.

Now the family is already hungry
