AC LEGGS SS #114 Mix

My neighbor likes the AC SS mix so going to do 3, 2lb chubs for him.

 

Non iodized salt in the bowl.   For casings.

3 casings in cool water for 45 mins or so.

AC Leggs #114 SS mix. 7-8 Tbs to 1 1/4 cup cold water and 1 1/4 tsp cure#1. ECA is your choice.

Dont know if going to stuff and fridge hang until tomorrow or mix, fridge then stuff/smoke tomorrow. I have the pellet hopper off my smokehouse.

Yeah even though the chubs, sticks, jerky and ring wont last him long. He needs to freeze some it.

IT is 122* and the PID just went to 160.

 

You see some oils on the casings. These are perforated fiberous casings.

Got the SS done and in the fridge around 2 am.

 

Notice the longer SS has a bend? Thats an air pocket prob caused from me pulling the casing to fast from the tube then the meat came in behind.

 

Oh well it happens.

Normally i fridge for a few days but i'm running out of time to get some things packed up. So this morning i cut the SS open to see and vac seal for my neighbor.

NEPAS, just two questions

 

#1, where the hell are you moving

 

#2, are there any houses in the area for sale

 

As always looks great.  I have not tried sausage yet and probably wont for awhile yet but it is great to know there is a ton of info on this site.
