Decided to do a fattie for lunch today so made it up lastnight and let it rest. In the smoker at 9am and it reached its IT of 160* at 11:30am. As you can see I had a couple of blowouts because I put alot of cheese in it. My smoker temp was 225 to 235* and I used Apple chips and a couple of Hickory chunks. This was my first Bacon weave and I seasoned the outside of it with Slap-Ya-Mama and heavy on the Black Pepper....
