Well, I decided to try my hand with pork butts.....and they came out AWESOME!!!!!!!!!!!
I rub'd them down the night before, covered and refrig.
I am using my "kettle to the god's" WSM 22.5. Got up at 4:00 a.m. this morning and fired up the good girl.
I bought them from Sam's club for $27.00, they were (2) 7.5 lbs each.
At 9:00 a.m. checked temp, they were at about 145....Squirted a little appel juice from time to time
I decided @ 10:00 a.m to wrap with foil....the only reason why was b/c I was going to be in church...and since they were at temp, why not.
At 4:00 p.m. open up and checked temp they were @ 210 deg.
I then proceeded to wrap in towels and put in cooler. I left them in cooler for about 1:45 mintues. then open up and let them set for about 15-20 min.
Then I proceeded to shred.
