My name is Chris and I'm from New Jersey. I was made aware of this forum through a friend. I am new to the smoking game and am hoping to pick up some good tips, techniques, and suggestions. After going through some of the other roll calls I see that there is an e-course and some wiki pages to use as helpful tools. I purchased Master Forge Charcoal smoker since it had a reasonable price and could use it to learn on before starting to get more serious. I smoked for the first time ever this past Sunday, using baby back ribs and brisket. They came out very flavorful but in my opinion, could have been more moist (like good bbq is supposed to be). I had trouble keeping the temperature lower (maybe I used too many coals?) and will do some research here and post some questions to hopefully get some helpful answers. I look forward to going through the learning process and getting better each time as well has having some good results to put over on the q-view.
