    What do you recommend, seasoned or  kiln dried logs for the fire and where do you get them or would you always use charcoal with smoking chunks/chips?

    Spatchcocked or not?

    Getting ready for my first venture into smoking, gonna try a chicken, using briquettes with oak chips,  but wondered do I soak the chips first, should I spatchcock the chicken or smoke it whole, also should I brine it? thanks in advance for putting up with a complete novice

    Made a start on my first smoker (well my brother's doing it for me) I'm busy scouring the internet for door clasps and a charcoal basket.

    Low carb bread.

    Ingredients. 80 g ground almonds 3 eggs 1 1/2 tsp baking powder 2 oz butter melted Method. mix all ingredients together and pour into a greased loaf tin and cook at 200c = 392f for 20 minutes It's that simple.  I used a Yorkshire pudding tin and it just filled the 4 molds.
