    Trying a turkey for the first time. It's about 13.5lbs. I chose to marinate it over night in a wet brine of 1/2 cup kosher salt 2 tbs garlic powder 2 tbs onion powder 1 tsp black ground pepper 1/2 cup surgar 2tsp paprika 4cups water I then vacuum sealed it and let sit for the last 24 hrs. I...

    Today I decided to do some spare ribs. It's -16 degrees Celsius out. Got my smoker up to a steady 235, I haven't touched it since and it seems to be stating constant there. I used "Bilbos world famous dry rub". Can't wait till its done. I will post final pics when done.

    I just used your "give one leg a nice love tap" method thanks Bama BBQ and added a couple handfuls of more charcoal. Temp is up to where it should be. Thanks for the info
