Just did my 3 o clock apple juice>double cover in a tray, went to use my quick read digital thermometer, batteries dead lol. No reason I should be too off on temps if I am following the write up to the T. I have a Fork style digital temp for the grill that I will try in a little bit.

Pulled out and readjusted the probe 4 times, still reading close to smoker set temp (220-240).

Put three or four deer in the freezer this year, tons of backstraps/tenderloins/roasts/ and more than enough ground venison.
I have never done sausages/jerky/etc before..I would say that besides our typical hamburger helper/venison tacos/chilli recipe, I haven't really ventured much further...
maverick or igrill? which do you prefer? both are around the same price, I do like the Iphone compatibility of the igrill..

In laws bought us a MES 40 for Christmas this year (awfully kind of them) and in my excitement I was anxious to try it out...

just got an MES 40 from the in laws yesterday...
did you "smoke" the whole time? Or did you put enough wood chips in to smoke for say 1-2 hours then the remainder just smoke free at low temp?
250$ budget on an electric smoker. Work long shifts so dont have time to check every 1-2 hours chips etc.
Reviews and "top 10's" are all over the map. Would love to smoke game, venison/goose/duck/ribs/chicken anything really.
