    I have the same MES I drilled (5) 1/2" holes just above the coils opposite of the controler and another next to top vent  have not had a problem since sometimes to much airflow that I plug some holes

    need help smoking duck (first time)

    The neighbor dropped off a couple wild duck last night they are skinned and clean, I would like to smoke them just wondering if I need to put bacon on the bird to keep it moist???, Any and all help would be useful. Also what would be a good brine.

    I would like to start making snack sticks but have a few questions, will be making out of venison?? When adding pork am I doing it for the pork or the pork fat ? is 25% pork about right? I have purchased 19mm collagen casing and LEM snack stick seasoning (original). Have to sign off now time...

    Made two fatties (1) with mozzarella,and sauteed mushrooms,red and green peppers 2nd one  with colby jack cheese,leaf spinach.asparagus spears, and pulled chicken ,can't put them on the smoker till Tuesday afternoon when we get up north,but they are ready can't wait--- here are pictures...

    Measuring Smoker Temp

    I use a piece of wood about 1 1/2" sq works great, but tropics is right you can't eat it
