Thanks for the response. About 5-7 uses with the first controller and 3 uses on the second controller. I stored it outside with an awesome cover that I also bungied around the bottom. I pulled the cover off after a long torrential downpour once to check and it was bone dry. In the winter it...
I have a MES G1 smoker that I loved when it worked. But have had reliability issues. After maybe he first 5 uses the digital readout stopped working. It was out of warrantee but Masterbuilt was really nice and replaced it. I literally got one good use out of it before the readout started...
@timbrejet - this time around it was great! Last time with the too smoky chicken it was the first time ever smoking. I was forcing way too much smoke. I'm a bit more dialed in now. Looking for thin blue smoke, getting rid of billowing white smoke and not adding wood every 20 minutes. This was...

@JimmyJ - I did have water in the pan - perhaps I need some play sand, eh? Sand works well. Water cools the smoker.
Why would water cool the smoker? If it's put it when heating the smoker it should be the exact temp as the inside of the smoker and should help keep the heat from fluctuating...
Anyone know where I can get a cover for my Masterbuilt Electric Smoker 30" that's waterproof/water resistant for outdoor storage? I was one click away from buying this one on Amazon:

But after reading the details it says...
