    140° in an hour and a half. Looks really good. I have it wrapped in foil right now. Will update with pics

    Nevermind. Had the probe in too far. Pulled the probe out a bit. Now IT is showing 110°

    IT is at 120° after only 40 mins. My thermo tested at 209 in boiling water. this seems fast based on my reading

    Last week's ribs came out pretty decent. Little salty on the rub. Today I try out a tri-tip. 2.5lb. Garlic pepper, garlic powder and a little salt.

    Bought 2 racks of SLC ribs today. Made my own rub taking cues from recipes here. I cut the racks in half to make sure they fit in my MF vertical. I plan to do the thicker half on the top rack for the higher temp. I've done 3 test burns to get an idea of venting. Looks like the bottom rack is...

    These are the pics as requested. I'm doing a test burn now. The temps shown are with some fire pan Mods. I just expanded the vent holes a little more. These temps are with all of the mod vents just capped. After waiting, the temps dropped to 275 top, 250 inside
