How did you come up with your screen name?

Same here. "Joseph" was taken, so I added the initial of my last name. I used to use several differnt screen names for several different sites, but I kept forgetting which was which. So I went for something simpler.

    My favorite method for ribs

After reading in these forums about the "3-2-1" method for ribs (smoke for 3 hours, wrap in foil to retain juices and smoke for 2 hours, unwrap, mop, and smoke for 1hour), I've standardized on this method for doing ribs. They come out great every time, and they pass the "acid test": people who...

    First Baby Back Ribs

Mom is too genteel to say "Piss off"; she just says "No!" (We can't give the dogs any 'cause they are on low-fat diets due to the risk of pancreatitis).  --JoeA.

    Gas smoker stays too hot

Well, the thermometer registered 227 in boiling water. Even being off by 15 degrees only gets the actual minimum down to about 260. I vcould imagine that opening the vents would make a difference with a charcoal fire, but this is a gas smoker. Are the vents going to make a big difference in the...

    Gas smoker stays too hot

Well, duh. Silly of me to assume that the analog thermometer would work perfectly after the smoker endured being shipped here. I'll test it tomorrow. Thanks! Thumbs Up --Joe A.

    Gas smoker stays too hot

My grill + smoker combo (Kenmore, from Sears) works great.. EXCEPT that I can't keep the temperature in the smoker below 275 degrees! I turned the temp control down to "LO", but the thermometer won't register anything lower than 275 unless I open the front door for a bit... and once I close the...

New grill &smoker, and first-time smoker operator

Mine too! Been keeping each other for not quite 20 years now. Got "4 thumbs up" from wife and mother-in-law for smoked pork butt. I didn't cook it long enough to pull it (in too big a hurrry); I just sliced it and served it. Smoking made it so tender that Mom-in-law didn't realize it was just a...

New grill &smoker, and first-time smoker operator

Thanks, Gary! (speaking of really getting into it, this afternoon): Wife: "What are you doing, Hon?" Me: "I'm smoking a pork butt for dinner." Wife: "Don't you have trouble keeping it lit?" Me (totally focused on smoker): "No, the flame on the grill kept blowing out, but the smoker... Oh."...

New grill &smoker, and first-time smoker operator

Thanks for the welcome, Brooksy! Here's a question (it seems logical to me, but that's no guarantee I'm right): my online source says to smoke a pork butt at about 225 degrees for 1-1/2 hours per pound. If I've sliced a 4-lb butt into 2 halves (one on each rack of the smoker), shouldn't I plan...

New grill &smoker, and first-time smoker operator

Left the old grill behind when we moved to TN; wife found a combination grill + smoker box for my housewarming present. Never used a smoker before, but she thought I could figure it out. She was right, as usual. :-) Grilled London broil last night and tried out the smoker today with a small...
