I have a 57cm weber, and it's great - I do a lot of low n slow on it. I got one with the 3 vents underneath rather than the one-touch model that has the ash catcher and (which I have found from from using a friends) is more 'set and forget' than mine. I didn't know about low n slow bbq when I...
Katz's is on the big list of things to do, as is NY pizza. (a few others also on the list - dumplings in c'town, breakfast in a diner, Brooklyn brewery and sampling some food truck grub. We're not big on Broadway shows but we love food and drink.)
Thanks Wimpey, I'll put those places on the...
Hi there,
I'm not sure if this is the right place to ask but here goes. My better half and I are heading to NYC for a few days in June. We live in Scotland and ideally we'd love to hire a convertible and spend a month or two touring the bbq joints all over the US. Sadly, we only have a few days...
Cool - sounds like you've got it all under control. I generally keep things simple on the day, get your prep done the day before then you can relax and enjoy it as well.
Hi Gav, that sounds like a lot of work - have you cooked large quantities for lots of people before? Can your smoker hold all that?
I would practise any cuts you haven't done before so if something goes wrong on the day you have a better idea of what's happening. I've done food for a dozen or...
I have a big jar of generic chilli flakes from a local Asian supermarket that I use for heat, I also have an assortment of dried and smoked chillies I got online to add a bit of flavour. I often put sliced jalapenos out with food so people can add their own. Over the years I have found I don't...
Cool, I have spent a bit of time in Wellington/Lower Hutt, and Whanganui. (grandparents)
Must have been funny watching the whole country breathe a sigh of relief after the rwc11?
I would like to live back there eventually and build myself a big wood powered smoker. Not sure what local wood...
Hi Lee,
Well done on the first smoke, the chook looks good. Be warned, this stuff gets addictive...
Where did you live in NZ? I am a South Canterbury lad living in Edinburgh.
Hi Danny, I have been laying low - was back in NZ over xmas, and have been wanting to get smoking again but DIY is cutting down on opportunities. Got some ribs in the freezer waiting for the day...
I was in Aus and NZ over xmas, got on the plane to come back here a month ago today. I smoked a 4lb pork shoulder on my brother's gas bbq in NZ; used some hickory chips and rosemary, cooked it about 6hrs (longer would have meant getting up way too early) and then sliced it, rather than pulled...
Hi Paul, welcome to the world of low n slow. The best way to get started is have a go - read as much as you can on here, spark up the smoker and get stuck in.
I scored a big chunk of cherry from some tree surgeons in a park near my work, and there were some oak logs mixed in with the firewood I got last year so that should last me a couple more years.
I also keep an eye out for rosemary bushes - dunno if the twigs add a lot but they certainly smell...
Good looking fatty Wade, I have that on the list of things to try as well.
Nothing done this weekend, due to kitchen shopping Saturday and various visits yesterday. Next weekend is possible if a planned weekend in the Lakes is cancelled due to bad weather, otherwise I have 27/9 pencilled in for...
