On friday i have an event where i am going in with 6 butts 1 brisket and sides.. MY MES 40 incher hates me....

So backstory, had 1 unit.. 2nd gen unit . Smoke exits on side, not top (too bad) anyway, 1st unit failed to properly report temps vs my own temp calcs. Masterbuilt replaced it under warranty. Second unit... worked good for the first few smokes, and now this is where i am at 4-5 months later. I...

Thoughts on MES 40 inch "bottom" of butt being Leathery/dry? + Pork for 75-100 question..

Is this just the way it is? My favorite part is when the sweet spicy bark melts in the mouth, usually the inside is perfect as well. I was up in blue ridge for the BBQ fest last week, and while meat street's bbq was decent, it wasn't as good as my own.But i am biased, i prefer a lot of...

Florida West Coast "get started" questions on licensing?

My woman's sister runs a lot of weekend markets, and she does some food markets, has food trucks, vendors etc... What all do i need to be able to setup as a vendor and sell smoked products?  I would be smoking at home and bringing the pulled pork/brisket, and eventually some day get bigger...

    AMNPS Florida Humidity tips?

Any tips for someone with a gen 2 40 mes? I've spoke to todd and tried everything and it seems no matter what i do.. whether it's let a flame sit for 10 mins, or run a heat gun on it as well, within the hour it goes out. My brisket has been in, for about 3 hours now and i've been out there for...

    Over my MES 40''

for christmas i received a MES 40 incher. Anyway, on to the real issue. The smoker, I was in touch with masterbuilt on several occasions and even had the unit replaced. THE TEMPS NEVER MATCH my own grate temps. I mean 40-90-100 degrees off. I woke up today 6am (wanted up at 5) because i knew i...

Picked up some "Pork Fat" from Win Dixie...

And 6 hours later my dogs are crazy...    This is like BARK without the butt,  while a little drier on some parts, it's definitely gelatinous. melting in your fingers. I love my some buttery fall apart pork. But, i have an addiction to the fat cap, i rarely can get the butt in the cooler without...

    Bottom Always leathery?

Anyone know what i am doing wrong that the bottom of the pork butt, is always like a leathery weird texture? Top with fat cap is like butter when it's ready. But, it seems like this bottom part is garbage. I am not talking about the interior of the butt or even past 2 cm's from bottom maybe...

So i decided to google this morning, and i have been just buying butts at whichever store has them on sale. MES 40 inch... Am i SOL?

My MES heats up to 275... or says their internal temp, but my maverick on the rack is consistently 100 degrees off for ours.. it's definitely not my maverick, i have tested it with the boiling water method and when i cook meats on the grill, they come out properly, as well as my sous vide water...

So i have a butt in, was hoping to get it done by 11:30 am tomorrow, but since the mes 40 is being a pain today..It doesn't look like it's going to happen, got this unit for christmas and have used it 3-4x and usually the temp is about 50 degrees off, but today... the IT reads 275, but maverick...
