    Ok so I got a little excited and forgot to take pics while I was making it but I did take one as I put it in the smoker. Started with a simple one. Sausage with mushrooms, peppers, onions and Colby Jack cheese. Wrapped in bacon ofcourse. Put it in at 235 hoping to crisp the bacon up.

    I did the 2-2-1 at 225. I used Hickory and Apple wood. When I wrapped them in foil I put some Jack Daniels in with the ribs. They were juicy and tasty. Thanks for the help

    I bought them already St Louis style. I pulled the membrane off the back before I seasoned them up. I think they were $3.99 a pound.

    Got three racks of St. Louis ribs today. Seasoned them up. Planning on starting them off tomorrow around 10. Gonna try out the 3-2-1 method. Wish me luck.

    Smoked bacon wrapped chicken breasts

    The salmon was amazing. It looked a little Dry when I took it out but it was nice and moist inside. The salmon took about 1 1/2 - 2 hours.

    I smoked the chicken breasts for just under five hours at 225. Internal temp was 164.
