    I couldn't get this picture to upload from my phone so I came in thru the backdoor.  The shiny rods are pieces of 3/8" stainless tubing. From my first cheese smoke I added a shelf under the stack for an old skillet to catch condensate drips.

    Here is my upright box. Only smoked cheese in upper two positions. So thinking of 3' long hanks of 6" links, 18" hanging on each side of 5 rods (atbtop)which will hold 6 or 7 hanks each without touching.

    I brined 4 small birds last weekend for my first Spatch. Brown Sugar, Salt and blended Jalapenos. Brushed with mayo and liberal amounts of Jeff's Rub. 325 with Pecan til 160 I.T. about 2 hours. Very happy with the even cooking, although the presentation lacked

    To spatch or not to spatch?

    Maybe this will be my weekend to Spatch a couple of yardbirds. I'm guessing one will fill a Bradley Rack, which I really like in my offset smoker main pit. Also have a pair for the upright when I cold smoke.  I guess I'll brine in salt and some Atkins friendly spices, Any other suggestions?

    Yep, the only advantage of a bottling bucket is batch-priming beer, or sparkling cider. Always bottle wine directly from carboy :) Prost!

    Commercial Fridge Build

    Have you put a magnet to it? Galvanized steel is magnetic, but so are cheaper grades of SS so you are only sure if magnet doesn't stick. Also Galvanized will shine up with vinegar.
