    Clean MES?

    So I'm trying to figure out if I need to clean out my MES and how to do it or if I should even do it. There is a smell that's hard to explain, but I feel like that's how my chicken smells after it comes out the smoker. Any suggestions or comments would be great.

    Salt and Pepper Pork Ribs

    Double smoked ham question

    Ok here is the question: On a double smoked ham do people prefer to smoke the ham with nothing on it or put down a bark (mustard and brown sugar) and then smoke? Done the bark three times now and just wondering if the smoke is getting a good penetration or not.
