    The stall can be annoying , I always just wait it out , I cooked 3 butts yesterday , and 1 of them stalled for 2 hours , it was the largest of the 3 , its worth the wait

    I got a deal on boston butts a week ago and bought 3 cases , which was a total of 18 butts. I couldn't wait to fire up the smoker again, also this was my first brisket , it was good but it still cant hold a candle to pork (just my opinion).  I didn't get any pics of the meat but I did get one...

    Anyone do Overnight Smokes?

    we used to do a lot of overnight smokes in my younger days , and always had a great time with some great friends , and to me that is what cooking is all about , but now that we have all gotten older nobody wants to stay up all night .  I used to cook every year for our Christmas dinner at work...

    Just picked up 2 shoulders for the 4th

    also picked up 4 racks of country ribs today as well , and im thinking about smoking some sausage balls as well , I usually bake them at 350 , but im going to try them at 250 on the smoker , I will probably keep half of them to bake in the oven just incase I mess them up on the smoker

    I usually use apple juice and pineapple juice mixture in a spray bottle , and as far as temps go I like to keep it around 250 , but everybody is different ,I  usually prepare to cook at 1 lb per hour at 250 , but its just a ball park figure , every time its a lil different ,  Good luck to you...

    I just picked up 2 nice pork shoulders and 2 tenderloins for a cookout on the 4th , super excited and cant wait , I have one of the shoulders and the tenderloins soaking in a brine that I made and one shoulder rubbed down and relaxing in the fridge , this will be the second time that I have used...
