    Box of Beef Chuck

    Its a long story, but I came across a box of Beef Chuck (about 70 lbs). Boned and trimmed, very lean almost no fat at all. So...the question is what to do with it? It looks to lean to smoke, grind it for burgers, cube it for stew?? It's in cryovac bags in the freezer. Any ideas would be appreciated!

    Yes, that's the heating element. BTW the ribs were fall off the bone tender, the shrimp was awesome but the potatoes could have cooked a little longer (about 2 hours) but they ate well!

    Dang! Forgot the pic coming off the grate but here it is for the 2nd two hour cook. I didn't put anything in the pan this time, going to let the natural juices do their thing. Got the taters ready to go in, covered in bacon grease and seasoned up!

    Started smoking 2 racks of bb using the 221 method. Going to add some potatoes and shrimp in towards the end. More pics of progress as I get there!
