Nearly the same as Jeff's recipe, but with 1/4 cup of beer and 1/3 stick of butter. Just had a little ketchup aftertaste I didn't care for. I think it may be the vinegar aftertaste (I used Heinz) I didn't care for. After adding the beer/butter, it dulled it a little.
Does anyone have a good substitute for ketchup for sauce recipes? I was thinking tomato sauce and paste. My issue is, the sauce finishes with a "ketchupy" taste that I don't care for. I could use less of it, but would still need a filler to make up for it. Any direction would be appreciated.
It turned out great. Everyone liked it. Heck, even I liked it and I'm not a ham guy. This weekend, it' will be baby backs and chicken. I figure I'll fire up the...grill... too and grill some veggies.
Here I am. I have a nice pork butt in the smoker for Easter. The mother in law brought one over and asked me to smoke it. Who am I to refuse the request of my mother in law, right? She has a really sensitive stomach, so no rubs, no nothing. Just smoke. I did rub a tiny bit of brown sugar and...
Threw down some ribs, t-bones, and chicken this weekend. Awesome stuff. I need to tone down the spice for the wife, though. I added a third stick of unsalted butter and 1/4 cup of beer to the sauce. I like it, but too spicy for the wife. Guess she gets her own special batch.
Money well...
I finally broke down and purchased the recipes. Looking forward to seeing how people like it. i have catered for many parties and weddings with my own sauce and people loved it. Problem is, I have grown to not like it. I'm looking forward to change.
That sounds awesome, buffalotom! I'm hoping to have my cheapo smoker lined and insulated by then. It's been a challenge to take a poor quality file cabinet with vents and make it into a good little smoker. Can't wait for a get together.
We put it in rice yesterday. It worked for my wife's i-pod. twice... someone doesn't check their pockets before washing clothes. I hope it works. The turkey was purdy. I'll try and get a couple of pics of the smoker showing the screws in the top.
I'm an engineer/ machinist. I work in a prototype shop. We do it all. There's only a few of us there, but we all do everything. The design and drawings, programming and setting up the machines, tool making, machining, and final assembly. I've been in the industry for about 20 years now and have...
I made some stuffing and apple cobbler for Thanksgiving yesterday. I think My neighbor got a shot of them. My camera got left outside last night and it rained. No SD card and the camera won't turn on. Had a few shots of the smoker going as well. I'm bummed a little.
Had my neighbor send a pic...
Sorry for the lack of pics. My son left the camera in his lawn chair last night...it rained. Next time I wont be so cheap and I'll buy a memory card instead of storing the pics on the camera.
Any who.. I did a few mods on the ECB (file cabinet with racks and heat proof paint in my book) I...
Knowing this is an old thread, perhaps we can give it some new life. I live in Hillsboro. It would be nice to get together with fellow smokers and smoke out a park. I have an el-cheapo wallymart smoker I'm working on. I'm ordering some sheet metal to line the inside with, sealing the doors...
Just curious who all stacks their DO's. If I'm cooking in my tiny back yard at the apartment, I like to stack my 10" on the 12". I have a Camp Chef 12" with feet on the lid to double as a skillet. It works perfectly with the 10" stove top DO I got from my great grandmother. A main course in the...
When camping, I use 2 different DO's on our last night. A last hoorah, if you may. I built a tripod similar to the Camp Chef tripod( mine was about $10 to make) and I hang my stovetop DO on it. In that one, I do a cobbler. I also use it for camp chili. The 12" Do I have has feet and rimmed lid...
