The smoking Tex looks to be slightly smaller interior-wise than the Smokin-IT #2 (in width and depth, but height is higher). I think width/depth is more important to fit larger cuts onto the racks (especially briskets). It also looks like you can gete a Model 2 Smokin-IT on their site for $399...
Hi Mike,
There are devices like the auber PIDs (http://www.auberins.com/index.php?main_page=index&cPath=14_28) that will sit power-wise between the smoker and your electric socket. They work by using their own temperature sensors (and leaving the smoker temp on the highest setting) to provide...
I concur with both of these. If you can afford it, go big early. I have a #2 that I'll eventually replace with a #3 to better handle larger, full briskets and large racks of ribs.
It's not necessary with the Smokin-IT. I use the tube/pellets since I had originally purchased the tube for use with my propane smoker, and I grew to like the Pitmaster's Blend pellets, so I just continued to use them with my Smokin-IT.
Congrats - I have a number 2 use it at least once a week.
My list of things are two sets of gloves - one for handling the hot meat directly (usually the black, rubbery looking ones) and ovegloves for handling the hot pieces of the smoker (temp probe, shelves) - though any type of kitchen mitt...
Thanks for the confirmation. I'll just have to log my times to better track cook times with this smoker.
Off to reheat some of this weekend's brisket :)
I always put my AMNTS on a rack just above the burner housing, and it burns evenly/thoroughly in the #2. Maybe trying that with the AMNPS might give it more "access" (per se) to the available oxygen in the box?
I've had a #2 for several months now, and use it almost weekly.
I've noticed with it that I have extremely long plateau times that seem out of whack with most expectations and my limited experiences with my propane smoker. For instance, I put a baby brisket (just under 3lbs) in yesterday...
I use a 12 inch Tube with my Smokin-IT #2 with no problem, out of the box.
My brother has a #3 and an 18in Tube, and he has oxygen problems with the single hole. He hasn't yet drilled another hole (or two) to resolve it.
Hi Pastor,
I've had no problem with airflow and the tube, with no modifications necessary. My brother has a #3, and the tube doesn't seem to work in his. I've also not noticed any airflow leaks (smoke coming from unexpected spots) - but maybe I'm the exception (or I've just not found a leak...
