I'm Stumped On Why My Beef Jerky Doesn't Taste Like The Marinade

I don’t pat dry. I just shake it before laying it on parchment paper. I’m going to 8 lbs tomorrow of eye round and will try making the marinade super super hot and see how that works out

I'm Stumped On Why My Beef Jerky Doesn't Taste Like The Marinade

I have an Excalibur dehydrator and have it at the max temp of 155. I'm sure it's not putting out that temperature though and that isn't enough heat to cook just dehydrate. It does make sense if I were cooking that the heat could effect the hot sauce in the marinade

I'm Stumped On Why My Beef Jerky Doesn't Taste Like The Marinade

I guess I need to compensate by over concentrating my marinade recipe. I'll try a small batch making the marinade super hot and see how that comes out. Maybe the fact that my current marinade recipe tastes so good in liquid form that I need to kick it up to the point that it's not as enjoyable...

I'm Stumped On Why My Beef Jerky Doesn't Taste Like The Marinade

I'm Stumped On Why My Beef Jerky Doesn't Taste Like The Marinade

I'm stumped on why my marinate tastes super good and spicy hot but the end product of jerky comes out rather plain tasting. I'm marinating for at least 2 days or longer and rotate the meat a few times each day. I use enough marinate to completely cover the meat but when I dehydrate my meat it...

Why does my Jerky lose it's kick after dehydrating

thanks for the replies.  I'm going to try two batches.  One batch I'll kick up the marinade so that it's hotter than I would enjoy and see if it loses some of the heat and the second I'll my typical marinade that I really and then try sprinkling some additional seasoning before it dries.  In the...

Why does my Jerky lose it's kick after dehydrating

I cover the entire meat with marinade and mix the meat up ever few hours and let it sit for at least 12 to 24 hrs.  I usually make 10 lbs. and put it in a large food grade rectangular container which has plenty of room for the meat.  I never towel dry the meat before dehydrating.  Like I said...

Why does my Jerky lose it's kick after dehydrating

I wanted to know why it loses so much of the flavor after it's dried.    I know I could make the marinade 10x hotter by blending in a couple dried habanero peppers with the seeds but I don't want to ruin my beef either.  I just wanted to know if it's normal to loose so much flavor after...

Why does my Jerky lose it's kick after dehydrating

I've been making jerky for a while and every time it always turns out much more mild than the sauce I marinated it in.  My marinade is plenty spicy and I will marinade the meat for at least 12 to 24 hours but after the meat has dried in my dehydrator it losses much of it's kick.  Just wondering...
